Teriyaki Chicken Tidbits & Cheese with a Fruit Cup



     Sometimes when I am hungry I do not always feel like eating something heavy. I just want to snack on something that is going to make me feel satisfied.  I love to make this dish on days like these. 

     It’s a simple dish that a person can switch sauces with for the chicken.  My two favorite sauces for this dish are Teriyaki and Buffalo. I have also made this dish using steak or pork tidbits.

Teriyaki Chicken Tidbits & Cheese with a Fruit Cup

Teriyaki Chicken Tidbits & Cheese

Ingredients
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch chunks
  • Kosher salt and freshly ground black pepper, to taste
  • Flour
  • Teriyaki Sauce (Homemade or store bought)
  • 1 tbsp on sesame seeds
  • Cheddar cheese (cut into 1 inch cubes)
  • Monterey Jack cheese (cut into 1 inch cubes)
  • Oil  

Instructions

Season chicken chunks with salt and pepper.  Dredge chicken chunks in flour then fry them in batches in oil over medium/high heat until golden brown. 





Drain chicken chunks on a paper towel.  Place cooked chicken chunks in a bowl and mix with teriyaki sauce.  



Serve chicken and cheese together in a cup or bowl and eat with a toothpick.  Sprinkle chicken with sesame seeds. (I used glass desert cups) See photo at bottom of page.



Homemade Teriyaki Sauce

 Ingredients
  • ⅓ cup (low sodium) soy sauce
  • 2 tbsp. honey
  • 1 tbsp. brown sugar
  • 2 cloves garlic, minced
  • 1 tsp. apple cider vinegar
  • ⅓ cup water
  • 1 tbsp. cornstarch
  • 1 tsp fresh ginger (minced)
Instructions 

In a medium saucepan, combine soy sauce, honey, brown sugar, garlic, ginger and vinegar over medium-high heat, stirring frequently. Dissolve cornstarch in water in a separate mixing bowl and then add to the saucepan. Cook for 6-8 minutes, stirring frequently, until thickened.

Fruit Cups

·         Pear (peeled & diced)
·         Mango (peeled & diced)
·         Pineapple (peeled & diced
·         ½ cup of sugar
·         ½ cup of water
·         Bibb lettuce
·         Maraschino cherries (garnish)

Instructions
Add peeled and cut up pear, mango, and pineapple into a bowl.  Cook sugar and water in a pan over medium heat until it coats the spoon, then let cool (this is called a “simple syrup”). After simple syrup has cooled pour over fruit in the bowl.  Serve fruit in a bowl or martini glasses lined with bibb lettuce. Garnish with a maraschino cherry on a toothpick and eat the fruit with the toothpick. See photo below.
